Mint Chocolate Chip Lucky Charms Blossom Cookies

Soft and chewy mint chocolate chip cookies filled with lucky charms cereal, and topped with a chocolate kiss. These easy cookies make the perfect easy treat to bake this St. Patrick’s day. Everyone will love the chewy texture of the cookies, and the classic mint chocolate chip flavors.

The cookie dough is made similar to a classic mint chocolate chip cookie dough, except with the addition of lucky charms cereal added into the cookie dough. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet. Bake until the cookies are fully cooked through. Remove from the oven, and place one chocolate kiss on each cookie. Let cool completely on a cooling rack before serving.

Mint Chocolate Chip Lucky Charms Blossom Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips
  • 1 cup lucky charms cereal
  • chocolate kisses

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Fold in the chocolate chips and lucky charms cereal.
  • Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven, and place one chocolate kiss on each cookie.
