Mint Chocolate Chip Cookie Cups
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon mint extract
- green food coloring
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, and mix until it is smooth.
- Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Fold in the chocolate chips.
- Evenly divide the cookie dough between the prepared muffin cups. Bake for 12-15 minutes.
