Soft and chewy classic mint chocolate chip cookie cups filled with all of the classic mint and chocolate flavors. Mint and chocolate are a classic flavor combination that everyone loves. These easy cookie cups make the perfect dessert to bake for a fun St. Patrick’s day treat. Everyone will love these tasty bites.

The cookie dough is prepared like a classic mint chocolate chip cookie dough. Then it is evenly divided between a lined muffin pan. Bake until the center of each cup comes out clean with a toothpick. Let cool completely on a cooling rack before serving.

Mint Chocolate Chip Cookie Cups

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, and mix until it is smooth.
  • Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Fold in the chocolate chips.
  • Evenly divide the cookie dough between the prepared muffin cups. Bake for 12-15 minutes.
