Mint Chocolate Chip Cookie Bars

Soft and chewy cookie bars with all of the classic flavors of mint chocolate chip cookie. It is so quick and easy to prepare these classic bars. These easy cookie bars make the perfect dessert for a St. Patrick’s day treat. Everyone will love the mint and chocolate flavors combined in these cookie bars.

The cookie dough is made just like how you would make classic mint chocolate chip cookie bars. The cookie dough is pressed evenly into a greased square baking dish and baked until the center of the cookie bars comes out clean with a toothpick. Let the cool completely before cutting into bars and serving.

Mint Chocolate Chip Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, and mix until it is smooth.
  • Add in the flour mixture, mix until it is fully combined. Add in the green food coloring and mix until it is fully green. Fold in the chocolate chips.
  • Evenly press the cookie dough into a greasted 8-inch square baking dish. Bake for 20-25 minutes.
