Mardi Gra Frosted Sugar Cookie Bars

Soft and chewy sugar cookie bars topped with a creamy and delicious buttercream frosting and topped with purple, green and gold sanding sugars. Everyone will love these easy chewy cookie bars for a fun and simple Mardi Gra themed dessert this year.

The cookie dough is made like a classic sugar cookie dough, press the dough into a greased square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before frosting. Frost with a homemade buttercream frosting and top with the sanding sugars.

Mardi Gra Frosted Sugar Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • purple, green and gold sanding sugar

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined.
  • Press the cookie dough into a greased 8-inch square baking dish and bake for 20-25 minutes. Let cool completely. In a large bowl, mix together butter, powdered sugar, and vanilla extract until smooth.
  • Spread the frosting onto the cooled cookie bars. Decorate with sanding sugars and cut into squares.
