Soft and chewy snickerdoodle cookies filled with chocolate chips and made purple, green and yellow with food coloring. These easy chewy chocolate chip snickerdoodle cookies make the perfect easy treat to bake for a fun Mardi Gra themed dessert.

The cookie dough is made like a classic chocolate chip cookie dough, then it is divided into three bowls, mix one with purple food coloring, one with yellow and one with green. Take a small amount of each cookie dough and roll into balls. Roll each one into a dish of granulated sugar and ground cinnamon. Place cookies onto a large ungreased baking sheet and bake until they are fully cooked through.

Mardi Gra Chocolate Chip Snickerdoodle Cookies

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips, divided
  • purple, yellow and green food coloring
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in egg and vanilla extract until smooth. Add in the flour mixture and mix until it is fully combined.
  • Divide the cookie dough between three bowls, mix one with purple food coloring, one with yellow and one with green. Fold 1/3 cup chocolate chips into each cookie dough. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Take a small amount of each cookie dough and roll together into balls. Roll cookies into the cinnamon sugar mixture. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
