Maraschino Cherry Chocolate Chip Snickerdoodle Cookies

Soft and chewy cookies filled with tons of delicious and juicy Maraschino cherries and chocolate chips. They are then rolled in a mixture of granulated sugar and ground cinnamon. Giving these cookies a classic snickerdoodle flavor that goes perfectly with the cherry and chocolate chip flavors. They make the perfect dessert for any holiday or occasion, such as Valentine’s day.

The cookie dough is started like a sugar cookie dough, except that instead of using vanilla extract, cherry juice is used instead. Chopped up Maraschino cherries and chocolate chips are then folded into the cookie dough. Roll the cookie dough into balls, then roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 tablespoon cherry juice
  • 1/2 cup chopped Maraschino cherries
  • 1 cup chocolate chips
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy.
  • Add in the vanilla extract and cherry juice, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the chopped cherries and chocolate chips.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
