The cookie dough is made similar to a classic chocolate chip cookie dough, except that instead of vanilla extract, cherry juice from the jar of Maraschino cherries is used. And chopped up Maraschino cherries are added into the cookie dough. Press the dough evenly into a greased square baking dish. Bake until the cookie bars come out clean with a toothpick. Let cool completely before cutting into bars and serving.
Maraschino Cherry Chocolate Chip Cookie Bars
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 tablespoon cherry juice
- 1/2 cup chopped Maraschino cherries
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and cherry juice and mix until smooth.
- Add in the flour mixture, and mix until it is fully combined. Fold in the chopped cherries and chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
