Soft and chewy cookies made from a box of lemon cake mix and filled with chocolate chips and butterscotch baking chips. The cookie dough is rolled into a mixture of granulated sugar and ground cinnamon, giving the cookies a delicious snickerdoodle flavor. Everyone will love these easy chewy cookies for any occasion.

The cookie dough is made by mixing a box of lemon cake mix with eggs and vegetable oil until smooth. Fold chocolate chips and butterscotch baking chips into the cookie dough. Roll the cookie dough into balls, and roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

  • 1 ( 15 oz.) box lemon cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup chocolate chips
  • 1 cup butterscotch baking chips
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the chocolate chips and butterscotch chips.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
