Tender fluffy pancakes are one of my favorite lazy weekend breakfasts. They are delicious served with butter and your favorite syrup. These pancakes are fluffier than usual, because they use extra baking powder in the pancake batter to make them more fluffy. Even though I like to make these pancakes on the weekends, they can easily be made ahead so that you can have homemade pancakes anytime. Making these pancakes perfect for lazy weekend brunches, or for quick weekday mornings.
There are a couple of ways that you can make these pancakes ahead of time, the first way is to make the pancake batter and refrigerate it until you need it, then cook the pancakes as normal. Or another option, is to whisk all of the dry ingredients together and store them in an airtight container. With that option, it would be like a pancake mix, and you would add the wet ingredients in when you are ready to cook them. The last option is the way that I will usually make pancakes because it is easier to make a big batch of them. Is to make the pancakes completely and let them cool. Then place them into a large freezer bag and freeze until you are ready to eat them. All that you would need to do to cook them is to heat them in the microwave for a couple of minutes.
Homemade Fluffy Pancakes
Ingredients
- 2 cups milk
- 2 teaspoons white distilled vinegar
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 2 large eggs
- 1/2 cup melted butter
Instructions
- In a large measuring cup, whisk together milk and vinegar.Let sit for 5 minutes. In a large bowl, whisk together flour, granulated sugar, salt, baking powder and baking soda.
- Add in eggs, melted butter and milk mixture. Whisk everything together until the pancake batter is just combined.
- Heat a skillet or griddle over medium-low heat and spray with non-stick cooking spray. Ladle about a 1/4 cup of batter for each pancake onto the hot skillet and let cook for a couple of minutes until bubbles start to form around the edges. Flip the pancakes and let cook for another minute on the other side until both sides are golden browned.
