Classic moist homemade banana bread is my favorite way to use up bananas. Banana bread is a classic treat that makes a great dessert or even as a breakfast. The bread is soft and chewy with tons of fresh delicious banana flavor. This easy quick bread uses ingredients that you may already have in your pantry. And it is a great dessert for when you have ripe bananas before they go bad. Serve this sweet treat as easy dessert or serve a slice for breakfast with some fresh fruit. Store this banana bread covered in the fridge for up to one week.

Ripe bananas are used for this, but you can also use frozen bananas instead of fresh. Mash the bananas in a large bowl until smooth. Stir in eggs, milk and vanilla extract until combined. Whisk in flour, sugar, salt and baking soda until a smooth thick batter forms. You can also add in ground cinnamon or other spices to add more flavor to the bread. Pour the batter into a greased 9-inch loaf pan. Bake until the bread is lightly browned, and it comes out clean with a toothpick. Let cool for 10-15 minutes before removing from the loaf pan.

Ingredients
  

  • 3 large bananas, mashed
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

Instructions
 

  • Preheat oven to 350 F. Grease a 9-inch loaf pan. In a large bowl, mash bananas. Stir in eggs, milk and vanilla extract.
  • Whisk in flour, sugar, salt and baking soda until smooth. Pour batter into the prepared loaf pan. Bake for 1 hour and 10 minutes.
