Halloween Peanut Butter Pudding Cookies

Soft and chewy peanut butter cookies made with a box of pudding mix, and made purple and green with food coloring for Halloween. Everyone will love the soft and chewy texture of the cookies and the delicious classic peanut butter flavors. They make the perfect fun Halloween treat this year.

The cookie dough is made like a classic peanut butter cookie dough, except for the addition of vanilla pudding mix mixed into the dry ingredients. Divide the cookie dough into two bowls, and mix one with purple food coloring and one with green food coloring. Take a small amount of each cookie dough and roll together into balls. Place onto a large ungreased baking sheet and bake until the cookies are fully cooked through.

Halloween Peanut Butter Pudding Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • purple and green food coloring

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, mix together butter, peanut butter, and both sugars until fluffy.
  • Add in egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Divide the cookie dough into two bowls. Mix one with purple food coloring, and one with green.
  • Take a small amount of each cookie dough and roll together into balls. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
