Halloween Oatmeal Cookie Bars

Soft and chewy oatmeal cookie bars filled with fun Halloween themed sprinkles. The texture is soft and chewy and it has all of the classic flavors of a oatmeal cookie. Everyone will love these easy chewy cookie bars for any fun Halloween or fall themed occasion.

The cookie dough is made similar to a classic oatmeal cookie dough, except with the addition of Halloween themed sprinkles folded into the cookie dough. Press the cookie dough evenly into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Halloween Oatmeal Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Halloween sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the sprinkles. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
