Beef, rice and tomato sauce stuffed into bell peppers with melted cheese on top. These tasty peppers are a great easy meal that everyone will love. Stuffed peppers are very customizable to your taste, with the types of meat that you use to any other fillings that you may want to add to it. You can even make these peppers vegetarian if you would like, by replacing the ground beef for beans instead. For these stuffed peppers, I made a classic ground beef and rice filling with tomato sauce. It is so simple to make, making it great for a quick weeknight dinner.
For the bell peppers, I used green bell peppers, but any bell peppers will work, as long as they can stand up on their own. The tops of the peppers need to be cut off and the seeds need to be removed from the inside. To make the filling, ground beef is cooked first until it is browned. It is then mixed with cooked rice and a can of tomato sauce. Fill the beef and rice mixture into the bell peppers and sprinkle shredded cheddar cheese on top. Or you can choose to leave the cheese off if you prefer. Bake the stuffed peppers until the cheese has melted and the peppers are tender.
Ground Beef Stuffed Bell Peppers
Ingredients
- 4 large bell peppers
- 1 pound ground beef
- 2 cups cooked rice
- 1 ( 15 oz.) can tomato sauce
- 3/4 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 F. Slice the tops off of the bell peppers and remove the seeds. Place peppers onto a large baking sheet.
- Brown ground beef in a large skillet over medium heat, breaking it up with a spatula until it is no longer pink. Drain the grease. Add in cooked rice and tomato sauce into the beef and let heat through.
- Evenly divide the beef mixture into each bell pepper. Sprinkle shredded cheese on top of each pepper. Bake for 20-25 minutes.
