Grinch Sugar Cookie Truffles

Easy cookie truffles made with sugar cookies mixed with cream cheese. They are rolled into balls and covered in melted white chocolate chips that is made green with food coloring. Each truffle is also topped with a heart shaped sprinkle. These easy truffles are perfect for a fun Grinch or Christmas themed treat.

The cookies are first baked, and then crushed into crumbs. Mix the sugar cookie mixture with cream cheese until combined. Roll the mixture into balls and place onto a plate. Melt the white chocolate chips in the microwave until it is fully melted and smooth. Stir in food coloring until it is fully green. Cover each truffle in the chocolate and set onto a plate. Decorate with sprinkles and let sit until it is completely set.

Grinch Sugar Cookie Truffles

Ingredients
  

  • 2 cups crushed sugar cookies
  • 8 oz. cream cheese, softened
  • 12 oz. white chocolate chips
  • green food coloring
  • heart sprinkles

Instructions
 

  • In a large bowl, mix sugar cookies with cream cheese until combined. Roll the mixture into balls and set onto a plate. Freeze for 20 minutes. Place chocolate chips in a microwave-safe bowl.
  • Heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth. Stir in the food coloring. Coat each cookie truffle and set onto a plate. Top with a heart shaped sprinkle and let sit until it is completely set.
