Soft and chewy peppermint cookies filled with m&m candy. These delicious chewy grinch cookies make the perfect Christmas cookie to bake this winter. Everyone loves a chewy classic m&m cookie, and these cookies are just like a classic m&m cookie except it is filled with peppermint flavor, and colored green for the grinch. Make these fun Christmas cookies this year for a delicious classic cookie that everyone will love.

The dough for these cookies, is made similar to making a classic m&m cookie, except instead of using vanilla extract, peppermint extract is used to give them more of a Christmas flavor. They are also colored green. Bake these cookies until the center comes out clean and let them cool down completely on a cooling rack before serving.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon peppermint extract
  • green food coloring
  • 1 cup m&ms

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In another large bowl, mix softened butter with sugar until fluffy.
  • Add in egg, and peppermint extract, and mix until smooth. Add in the flour mixture, and mix until a thick dough forms. Add in the green food coloring, and mix until it is fully green.
  • Fold in the m&ms. Roll the cookie dough into balls, and place at least 2-inches apart onto an ungreased baking sheet. Bake for 10-12 minutes.
