Grilled BBQ Roast Beef Sandwich

Earlier this week, I made a crock-pot barbecue roast for dinner. But there was so much leftover meat that I needed to find a new way to use it all up. So I made this grilled BBQ roast beef sandwich with the leftovers. The sandwich is made similar to a grilled cheese sandwich except with swiss cheese, barbecue roast meat and pickles. It is a delicious way to use the roast beef to create a new meal.

The sandwich is prepared with 1/2 tablespoon of mayonnaise on one side of each slice of bread. The shredded leftover barbecue roast beef is placed onto four of the slices of bread. The roast beef is topped with pickle slices and one slice each of swiss cheese. I used swiss cheese for these sandwiches, although you can use any sliced cheese that you want such as american or cheddar or even provolone cheese instead. Place the other slice of bread on top, mayo side down. Butter the outsides of the sandwiches and place onto a griddle or skillet over medium heat. Let cook until the bread is lightly browned, flip and cook the other side until both sides are browned and the cheese is melted.

Grilled BBQ Roast Beef Sandwich

Ingredients
  

  • 8 slices bread
  • 1 1/2 cups leftover BBQ roast
  • 4 tablespoons mayonnaise
  • 1/4 cup pickle slices
  • 4 slices swiss cheese
  • Butter, softened

Instructions
 

  • On 8 slices bread, spread mayonnaise on one side. Top 4 slices of bread with BBQ roast. Top with pickle slices and one slice of swiss cheese. Top with the remaining bread, mayo side down.
  • Spread softened butter on both sides of the sandwiches. Cook in a skillet over medium heat until browned, flip and cook other side until browned and the cheese has melted.
