Quick and easy appetizer with six simple ingredients. This Greek bruschetta is topped with olives, feta cheese, and chopped tomatoes. It only takes a few minutes to put this simple appetizer together. It goes great served with just about any summer meal, such as grilled chicken. French bread slices are toasted and topped with a tasty mixture with delicious Mediterranean flavors.

To toast the bread, french bread is sliced and brushed with olive oil. Bake until the bread is lightly toasted. The tomato mixture is made with chopped kalamata olives, feta cheese, diced tomatoes, and dried oregano. Top each toasted bread slice with the tomato mixture.

Ingredients
  

  • 1 loaf french bread, sliced
  • 1 tablespoon olive oil
  • 1/2 cup kalamata olives, chopped
  • 1/4 cup feta cheese
  • 2 small tomatoes, chopped
  • 1/2 teaspoon dried oregano

Instructions
 

  • Preheat oven to 350 F. Place bread slices on a large baking sheet. Brush with olive oil. Bake for 5-6 minutes.
  • In a medium bowl, combine olives, feta cheese, tomatoes, and oregano. Place on top of each bread slice.
