Soft and chewy gingerbread cookies filled with Christmas-themed sprinkles. These cookies are fun to make for the holidays. They have a soft and chewy texture and all of the classic flavors of gingerbread cookie. With sprinkles mixed into the cookie dough, giving these cookies a fun Christmas look to them. Everyone will love making these cookies together this Christmas.

For the cookie dough, it is made like a classic soft baked gingerbread cookie dough. Except Christmas-themed sprinkles are folded into the cookie dough. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet, and bake until the center of the cookies comes out clean with a toothpick. Let them cool completely on a wire rack before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves.
  • In another large bowl, combine butter, sugar, and molasses until fluffy. Add in egg and vanilla extract, and mix until smooth. Add the flour mixture in until it is fully combined.
  • Fold in Christmas sprinkles. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
