Thanksgiving is next week, and while I love the traditional creamy mashed potatoes this fried onion mashed potato casserole is so delicious. Creamy mashed potatoes with cheddar cheese topped off with crispy french fried onions. These cheesy crispy mashed potatoes make a great Thanksgiving side dish to bring along to your holiday dinner. You can easily make this casserole ahead of time, by before topping with the shredded cheese and french fried onions, cover and refrigerate it until you are ready to bake.
Peel and cube russet potatoes into 1-inch cubes. Place them into a large saucepan and cover with water. Bring it to a boil and let simmer until the potatoes are fork tender. Drain and place the potatoes into a large bowl. Mash the potatoes with butter, salt and pepper. I like to use a hand mixer to mash my potatoes because it makes them more smoother. But if you prefer your mashed potatoes to be less smooth, you can use a potato masher. Fold in 1/2 of the french fried onions into the mashed potatoes. Spread the mixture out into a greased baking dish and top with the shredded cheddar cheese and the remaining french fried onions. Bake until the cheese has melted and the onions are crispy.
Fried Onion Mashed Potato Casserole
Ingredients
- 3 pounds russet potatoes, peeled and cubed
- 1/2 cup butter
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup shredded cheddar cheese
- 1 container french fried onions
Instructions
- Preheat oven to 350 F. Peel and dice potatoes into 1-inch cubes. Place potatoes into a large saucepan. Cover with water and bring to a boil. Let simmer for 15-20 minutes, until potatoes are fork tender.
- Drain and place potatoes into a large bowl. Add in butter, salt, pepper and 1/2 of the french fried onions. Beat with a mixer until smooth.
- Spread mashed potato mixture into a greased baking dish. Top with shredded cheddar cheese and the remaining french fried onions. Bake for 25-30 minutes.
