Classic grilled cheese sandwich with a fried egg covered with cheese. It is so easy to make this cheesy sandwich, and it is great as a breakfast sandwich or for dinner. For a breakfast sandwich, you can even add in some cooked bacon to the sandwich. This sandwich is so delicious, the fried egg goes perfectly with a cheesy grilled cheese sandwich. You can make this sandwich ready in less than 20 minutes, making it great for a quick and easy meal.

The fried egg is cooked first, make it as you would normally cook a fried egg. Place one egg on two of the slices of the bread and sprinkle with cheese. I used shredded cheddar cheese for this, but you can also use a slice of cheddar or american cheese instead. Top with the other slice of bread and spread butter on both slices of bread. Cook over medium heat until the cheese has melted and both sides are lightly browned.

Ingredients
  

  • 4 slices bread
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • butter

Instructions
 

  • Heat a skillet over medium-low heat and spray with non-stick cooking spray. Crack eggs into the skillet and let cook for 1-2 minutes, flip and let cook for another minute.
  • Place one fried egg on two slices of bread. Sprinkle each with 1/4 cup shredded cheddar cheese and top with the remaining bread.
  • Spread butter on the outsides of the bread. Cook the sandwiches in a clean skillet over medium heat until lightly browned. Flip and cook the other side until both sides lightly browned.
