Fresh Strawberry Pie

Sweet and delicious pie made with fresh strawberries makes the perfect summer dessert. It is so quick and easy to make this pie, fresh strawberries are covered with sweet strawberry mixture. The pie is kept in the refrigerator for at least 3 hours before serving. This pie is great for serving for memorial day or the fourth of July. Top with whipped cream for serving.
Before adding the strawberries, the pie crust is first baked according to the package directions. After the crust has cooled, place fresh sliced strawberries into the pie crust. To make the strawberry jelly mixture, fresh diced strawberries, are cooked with sugar, cornstarch, lemon juice, and water. Cook until the mixture has thickened. Pour mixture over the sliced strawberries and refrigerate for at least 3 hours, or until you are ready to serve.

Ingredients
  

  • 1 9-inch pie crust
  • 1 pound fresh strawberries, sliced
  • 1 pound fresh strawberries, diced
  • 1 cup granulated sugar
  • 4 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1 cup water

Instructions
 

  • Baked pie crust according to package directions. Let cool. Place sliced strawberries into the pie crust.
  • In a medium saucepan over medium heat, add strawberries, sugar, cornstarch, lemon juice, and water. Continue to cook over medium heat, until thickened. Pour mixture over strawberries in pie crust. Refrigerate for at least 3 hours, or until serving.
