Fourth of July Peanut Butter Cookie Cups
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fourth of July sprinkles
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, brown sugar, and granulated sugar until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles. Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
