The brownie batter is made by whisking all of the ingredients together until smooth. You can also use a box of brownie mix and prepare it according to the package directions. Divide the brownie batter between a paper lined muffin pan. Top with the cookie dough. Bake until each brownie cup comes out clean with a toothpick.
Fourth of July Peanut Butter Brookie Cups
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 large eggs
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fourth of July sprinkles
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract, and mix until smooth.
- In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the sprinkles.
- Divide the brownie batter between the paper liners. Top with the cookie dough. Bake for 20-25 minutes.
