Everyone loves peanut butter balls for every holiday or occasion. They are so quick and easy to make, and no baking is needed. For these peanut butter balls, mini marshmallow bits are added into the peanut butter mixture, giving these peanut butter balls a fluffernutter flavor. Peanut butter and marshmallows are a classic flavor that goes together perfectly in these easy tasty candies.

The peanut butter mixture is easy to make, butter is mixed with peanut butter, powdered sugar, and vanilla extract until it is fully combined. Roll the peanut butter dough into small bite-sized balls, and set onto plates. Refrigerate while you melt the chocolate. The chocolate chips are melted in the microwave in 30-second intervals, stirring well after each interval, until the chocolate has fully melted and is smooth. Use a fork to fully coat each peanut butter ball into the melted chocolate. Set onto plates and let sit until the chocolate has completely set.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup peanut butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini marshmallow bits
  • 12 oz. chocolate chips

Instructions
 

  • In a large bowl, combine butter with peanut butter, powdered sugar, and vanilla extract until smooth. Fold in mini marshmallow bits. Roll the dough into balls, and set onto a plate. Refrigerate for at least 20 minutes.
  • Place the chocolate chips into a microwave safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth.
  • Fully coat each peanut butter ball into the melted chocolate, and set onto plates. Refrigerate until the chocolate has completely set.
