Flourless Peanut Butter Cookie S’mores

Soft and chewy peanut butter cookies sandwiched with marshmallows and chocolate chips. The peanut butter cookie dough is made using only three simple ingredients, an no flour is needed to make them. After they are baked, they are topped with marshmallows and chocolate chips, and sandwiched with more peanut butter cookies. These easy peanut butter cookie s’mores are perfect for a fun summer themed treat that everyone will love.

The only five ingredients that you need for these s’mores is peanut butter, granulated sugar, one large egg, marshmallows, and chocolate chips. The peanut butter is mixed with sugar and egg until smooth. Use a cookie scoop to place the cookie dough onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are cooked through. Let them cool slightly before removing half of the cookies from the baking sheet. Place one marshmallow and some chocolate chips onto each cookie on the baking sheet. Bake for just a couple of minutes, until the marshmallows start to puff up. Remove from the oven, and sandwich with the remaining half of cookies.

Ingredients
  

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • marshmallows
  • chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine peanut butter with sugar and egg until smooth. Use a cookie scoop to place the cookie dough onto a large ungreased baking sheet at least 2-inches apart.
  • Bake for 10-12 minutes. Remove half of the cookies from the baking sheet. Place one marshmallow and some chocolate chips on each peanut butter cookie on the baking sheet.
  • Bake for 2-3 minutes. Remove from the oven, and sandwich with the remaining half of cookies.
