Flourless Easter Monster Cookie Cups

Soft and chewy peanut butter cookie cups made without any flour. Oatmeal is added to the cookie dough, along with chocolate chips and Easter themed M&Ms. These easy cookie cups have all of the classic flavors of a monster cookie, but with a Easter twist. They are perfect for any spring dessert.

The cookie dough is quick and easy to make, all of the ingredients are mixed together in a large bowl until smooth. Evenly divide the cookie dough between a paper lined muffin pan. Bake until each cookie cup comes out clean with a toothpick in the center.

Flourless Easter Monster Cookie Cups

Ingredients
  

  • 1 cup peanut butter
  • 1 cup quick oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup chocolate chips
  • 1 cup Easter M&Ms

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together peanut butter, oats, brown sugar, granulated sugar, and egg until smooth. Fold in the chocolate chips and M&Ms.
  • Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
