Soft and chewy classic chocolate chip cookies, made from a box of baking mix. These quick and easy cookies are delicious, filled with chocolate chips, they taste like a classic chocolate chip cookie. Only one mixing bowl is needed to make these cookies, making them perfect for a easy dessert that everyone will love.

The cookie dough is started like a classic chocolate chip cookie dough, but instead of flour, all-purpose baking mix is used instead. Any mix, such as bisquick will work well in these cookies. Mix all of the ingredients together in a large bowl. Use a cookie scoop to place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Easy Baking Mix Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose baking mix
  • 1 cup chocolate chips

Method
 

  1. Preheat the oven to 350 F. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  2. Add in the baking mix, and mix until it is fully combined. Fold in the chocolate chips. Using a cookie scoop, place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
