Nachos are a very versatile dish, from the type of cheese you use to the toppings that you add. You can top these nachos with your favorite nacho toppings, such as diced tomatoes or onion or even guacamole.
Just four ingredients are needed for these nachos, tortilla chips, cooked chicken, cheese and pickled jalapeno slices. Tortilla chips are spread out into a single layer onto a baking sheet. These nachos are great for using leftover chicken, or a rotissery chicken would also work great for this. Place the cooked and diced chicken on top of the chips and sprinkle with shredded cheddar cheese. Pickled jalapeno slices are placed over the cheese, although you can replace the jalapenos for any other your favorite nacho toppings. Bake until the cheese has fully melted.

Ingredients
- 3 cups tortilla chips
- 1 cup cooked and diced chicken
- 2 cups shredded cheddar cheese
- pickled jalapeno slices
Instructions
- Preheat oven to 350 F. Spread the tortilla chips out onto a baking sheet in a single layer. Top evenly with cooked and diced chicken.
- Sprinkle with shredded cheddar cheese. Top with pickled jalapeno slices. Bake for 8-10 minutes.
