Soft and chewy peanut butter cookies for Easter, covered in Easter themed sprinkles, and topped with a chocolate kiss. These easy sprinkle blossom cookies make the perfect easy Easter themed treat. They have the classic delicious flavors of a classic peanut butter cookie, with a chocolate kiss on top.

The cookie dough is started like a classic peanut butter cookie dough, then it is rolled into Easter themed sprinkles, and baked until they are fully cooked through. Remove from the oven, and place one chocolate kiss on each cookie. Let cool completely on a cooling rack before serving.

Easter Peanut Butter Sprinkle Blossom Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Easter sprinkles
  • chocolate kisses

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Place the sprinkles into a shallow dish. Roll the cookie dough into balls, and roll each one into the sprinkles.
  • Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven, and place one chocolate kiss on each cookie.
