Easy soft and chewy monster cookie bars filled with peanut butter, oats, chocolate chips and Easter themed M&Ms. Everyone will love the soft and chewy texture of the cookie bars and the delicious peanut butter and chocolate flavors. They are perfect to bake this Easter.
The cookie dough is made like a classic monster cookie dough, except for the addition of Easter themed M&Ms. Press the cookie dough into a square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Easter Monster Cookie Bars
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup quick oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 cup Easter M&Ms
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt and baking soda. In a large bowl, mix together butter, peanut butter and sugar until fluffy.
- Add in egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the chocolate chips and Easter M&Ms. Press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
