Easter M&M Pudding Cookies

Soft and chewy cookies made with a box of vanilla pudding mix and filled with Easter themed M&Ms. Everyone will love these easy soft and chewy cookies. The pudding mix makes them more soft and chewy, they are perfect to bake this Easter season.

The cookie dough is made similar to a classic sugar cookie dough, except for the addition of vanilla pudding mix whisked into the dry ingredients. Fold in Easter themed M&Ms, and use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Easter M&M Pudding Cookies

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup Easter M&Ms

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, mix together butter and both sugars until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the M&Ms. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
