Soft and chewy classic oatmeal cookies filled with Easter themed sprinkles and chocolate chips. These easy cookies have the same soft and chewy texture of a classic oatmeal cookie, but with the addition of delicious chocolate flavors. Everyone will love these easy cookies this Easter or spring.

The cookie dough is made similar to a classic oatmeal cookie dough, except for the addition of Easter themed sprinkles and chocolate chips mixed into the cookie dough. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet. Bake until the cookies are fully cooked through.

• 1/2 cup butter, softened
• 1 cup granulated sugar
• 1 1/2 cups all-purpose flour
• 1 cup quick oats
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 1 large egg
• 1 teaspoon vanilla extract
• 1/2 cup Easter sprinkles
• 1 cup chocolate chips

Method

 

1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
2. Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles and chocolate chips. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
