Soft and chewy chocolate brownie cookies filled with fun Easter themed sprinkles. These easy brownie cookies are perfect to bake this Easter or spring. Everyone will love the classic chewy brownie texture and flavor in these easy cookies.

The brownie batter is made by mixing all of the ingredients together in a large bowl until smooth. Use a cookie scoop to place the brownie batter onto a ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Easter Brownie Cookies

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup Easter sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract until smooth.
  • Fold in the sprinkles. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
