Soft and chewy peanut butter cookies with a fun and easy Earth day themed twist. Half of the cookie dough is made green and the other half is made blue. Then they are rolled together to look like the Earth. The cookies are also rolled in a mixture of granulated sugar and ground cinnamon, giving them a delicious snickerdoodle flavor.
The cookie dough is made like a classic peanut butter cookie dough, then half of the dough is mixed with green food coloring and the other is mixed with blue. Take a small amount of each cookie dough and roll together into balls. Roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet and bake until they are fully cooked through.

Earth Day Peanut Butter Snickerdoodle Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- green and blue food coloring
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture and mix until it is fully combined. Divide the cookie dough between two bowls, and add green food coloring to one bowl and blue to the other.
- In a shallow dish, whisk granulated sugar and ground cinnamon together. Take a small amount of cookie dough from each dough and roll together into balls. Roll in the cinnamon sugar mixture and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
