I love using the crock-pot during the warmer summer months, because there is no need to heat the house up with the oven. Pulled pork sandwiches is one of my favorite summer meals to make. They are simple to make, especially when they are made in the crock-pot, and they can easily feed a crowd. Only three ingredients are needed for the entire dish, just a pork shoulder or pork loin, a can of root beer and a bottle of barbecue sauce. Since all of the ingredients are naturally gluten-free, if you want to make this meal completely gluten-free instead of serving the pork on hamburger buns, serve it by itself or make a lettuce wrap with it.
I used a 3 pound pork shoulder for this recipe, although you can also use a pork loin roast or use a different size of pork. If you are using a different size, you may need to adjust the cooking time, until the pork is fully cooked through. Place the pork in the crock-pot and evenly pour the barbecue sauce and root beer over the pork. Cover and cook on low for 8 hours or on high for 5-6 hours. When the pork is fully cooked, it should easily be able to be shredded. Serve the shredded pork on hamburger buns or by itself with baked beans or or favorite barbecue side dish.
