The crock-pot is the best way to cook shredded chicken. Sandwiches are my favorite way to eat shredded chicken, and you can season and customize it any way that you want. For these sandwiches, I cooked chicken in a crock-pot with cream cheese and a packet of ranch dressing seasoning mix. The chicken is tender and creamy with the cream cheese. Serve over hamburger buns for chicken sandwiches. Or you can also make this chicken into tacos with tortillas. Or for a healthier option, you can serve this chicken over rice instead of bread.
To cook the chicken, place thawed chicken breast into a greased crock-pot. Sprinkle the packet of ranch dressing seasoning mix over the chicken. Place cubes of cream cheese evenly over the chicken. Cover and cook on low for 6-8 hours or on high heat for 4-5 hours. The chicken is done when it is tender and can be easily shredded with two forks. The cream cheese may not fully melt, but after the chicken is shredded return it to the crock-pot. And mix the shredded chicken with the cream cheese until the cheese is melted and the mixture is fully combined. This chicken is a great 3 ingredient meal with less than 10 minutes of prep time.
