Crispy French Fried Onion Colby Jack Mac and Cheese

Creamy and delicious baked mac and cheese filled with colby jack cheese and topped with crispy french fried onions. This easy and creamy baked mac and cheese will make the perfect dish to serve for any holiday dinner, like Thanksgiving or Christmas.

The mac and cheese sauce is made similar to a classic cheese sauce, except for the addition of colby jack cheese in the sauce. Mix the sauce with cooked pasta and spread it out into a greased baking dish. Top with more cheddar cheese and french fried onions. Bake until the cheese has fully melted and the topping is crunchy.

Crispy French Fried Onion Colby Jack Mac and Cheese

Ingredients
  

  • 16 oz. elbow pasta
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups shredded colby jack cheese
  • 2 cups shredded cheddar cheese, divided
  • 1 ( 6 oz.) container french fried onions

Instructions
 

  • Preheat the oven to 350 F. Cook pasta according to package directions. Drain and place into a large bowl. In a large saucepan over medium heat, melt butter, add in flour and cook for a minute to brown.
  • Add in the milk, salt, pepper, colby jack cheese, and cheddar cheese. Cook the mixture until the cheese has completely melted and the sauce has thickened.
  • Mix the sauce with the pasta. Spread the mixture into a greased baking dish. Top with the remaining cheddar cheese and fried onions. Bake for 20-25 minutes.
