Creamy mac and cheese with three different types of cheese makes for the perfect fall weather comfort food. It is smooth and creamy and it cooks on the stove top in less than 20 minutes. Cheddar cheese, mozzarella cheese and parmesan cheese are all added to the creamy sauce. Making it the ultimate blend of creamy and stringy. You can serve this pasta as a side dish or eat it as main dish with a side of salad or bread.
Pasta is first cooked according to the package directions, I used elbow shaped pasta but any small shaped pasta works well. For the cheese sauce, you can either use the same saucepan that you cooked the pasta in or use a different one to prepare the sauce while the pasta cooks. Melt butter over medium heat and cook minced garlic in it until it is fragrant. Whisk in flour and cook it for a minute until a roux forms. Add milk, salt, pepper, and all three of the shredded cheese to the sauce.
Let cook while whisking consistently over medium heat until all of the cheeses have melted and the sauce has thickened. Pour the cheese sauce over the cooked pasta and mix to fully coat the pasta. For the cheeses that I used, I used a shredded cheddar cheese for the classic mac and cheese taste. Shredded mozzarella cheese makes the sauce more stringy and delicious. And the last type of cheese that I used was a shredded parmesan cheese. Shredded parmesan is different than the grated parmesan cheese, it makes a great addition to the other cheeses in this sauce.
Creamy Three Cheese Mac and Cheese
Ingredients
- 16 oz. elbow pasta
- 4 tablespoons butter
- 2 cloves minced garlic
- 4 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 1/2 cups milk
- 2 cups shredded cheddar cheese
- 3/4 cup shredded mozzarella cheese
- 3/4 cup shredded parmesan cheese
Instructions
- Cook pasta according to package directions, drain. In a large saucepan over medium heat, melt butter.
- Cook minced garlic in butter until fragrant. Add flour and cook for another minute to brown. Add in milk, salt, pepper, cheddar cheese, mozzarella cheese and parmesan cheese.
- Continue to cook over medium heat, while whisking constantly. Cook until cheeses have melted and the sauce has thickened. Mix sauce with cooked pasta.
