Creamy Mashed Potatoes

Creamy and smooth mashed potatoes are a classic to have for holiday dinners. Thanksgiving and Christmas are never complete without a side of these warm buttery mashed potatoes. They are one of my favorite holiday dinner side dishes. These mashed potatoes are creamy and buttery, but to make the mashed potatoes even creamer instead of using just butter for them, cream cheese is used. You wont be able to really taste the cream cheese in these potatoes, but it will just make them so much more fluffy and creamy.

My preference of potatoes for making mashed potatoes is russet potatoes, but you can also use yukon gold or another type for these. Peel and dice the potatoes into 1-inch cubes and place into a large saucepan. Cover the potatoes with water and bring to boil over medium heat. Let the potatoes simmer for about 15 minutes, or until the potatoes are fork tender. Drain and rinse the potatoes with cold water to stop the cooking process. Place the potatoes into a large bowl, and using either a hand mixer or a potato masher, mash the potatoes with the remaining ingredients until smooth and creamy. I like to use the hand mixer to mash the potatoes, because it makes the potatoes so much more creamy and fluffy. But if you would like the mashed potatoes to be a little more chunkier, than a potato masher would be best.

Creamy Mashed Potatoes

Ingredients
  

  • 5 pounds russet potatoes
  • 8 oz. cream cheese
  • 1/2 cup butter
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions
 

  • Peel and dice potatoes into 1-inch cubes and place into a large saucepan. Cover with water and bring to a boil over medium heat. Let simmer for 15-20 minutes, until fork tender.
  • Drain and place potatoes into a large bowl. Add cream cheese, butter, salt and pepper. Beat with a mixer until smooth and creamy.
