Easy chocolate brownie cups baked with a confetti cake mix cookie dough on top. These easy brookie cups combines both a chocolate brownie and a chewy snickerdoodle cookie into one delicious dessert. Everyone will love these easy brownie cookie cups for any occasion.

The brownie batter is made by mixing all of the ingredients together in a large bowl until smooth. Divide the batter between a paper lined muffin pan. For the cookie dough, the cake mix is mixed with eggs and vegetable oil until smooth. Roll the cookie dough into balls, then roll each one into a mixture of granulated sugar and ground cinnamon. Place on each brownie batter. Bake until each brownie cup comes out clean with a toothpick.

Confetti Cake Mix Snickerdoodle Brookie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 ( 15 oz.) box confetti cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract until smooth.
  • Evenly divide the brownie batter between the prepared paper liners. In a large bowl, combine cake mix, eggs, and vegetable oil. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookie dough over the brownie batter. Bake for 20-25 minutes.
