Cocoa Pebbles Snowball Cookies

Easy snowball cookies filled with chocolate cocoa pebbles cereal. The cookies are rolled in a dish of powdered sugar to give them a classic snowball look. These easy snowball cookies make a delicious and easy treat that everyone will love for just about any holiday or occasion.

The cookie dough is made similar to a classic shortbread cookie dough, except for the addition of cocoa pebbles cereal folded into the cookie dough. Roll the dough into balls, and place them onto a large ungreased baking sheet. Bake until the bottoms of the cookies are lightly browned. Roll the cookies into a dish of powdered sugar.

Cocoa Pebbles Snowball Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup cocoa pebbles cereal
  • 1/2 cup powdered sugar

Method
 

  1. Preheat the oven to 350 F. In a large bowl, mix butter and sugar together until fluffy. Add in the vanilla extract, and mix until smooth. Add in the flour, mix until it is fully combined.
  2. Fold in the cocoa pebbles cereal. Roll the cookie dough into balls, and place onto a large ungreased baking sheet. Bake for 10-12 minutes. Place the powdered sugar into a shallow dish. Roll each cookie into the powdered sugar.
