Classic Mini Cheesecakes

Quick and easy cheesecake made into perfectly sized portions with these classic mini cheesecake cups. Baking a cheesecake usually takes over an hour to bake. But because these cheesecakes are baked in muffin tins they take half the time to cook. And there is no need to cut slices, they are already portioned for each person. You can make these mini cheesecakes for just about any occasion, Christmas, Valentine’s day, or just because you want a sweet treat to enjoy. 

The crust for these cheesecakes is made with a simple graham cracker crust, made by combining crushed graham crackers, melted butter, and sugar. Press the mixture into a 12 cup muffin pan that has been lined with paper liners. To make the cheesecake filling, cream cheese mixed with sugar, eggs, and vanilla extract until a smooth batter forms. Evenly divide the cheesecake batter over each graham cracker crust. Bake for about 20 minutes. Let cool completely at room temperature before refrigerating until serving.

Ingredients
  

  • 2 ( 8 oz.) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 2 tablespoons granulated sugar

Instructions
 

  • Preheat oven to 350 F. In a medium bowl, combine crushed graham crackers with melted butter, and granulated sugar. Press the mixture into 12 lined muffin cups.
  • In a large bowl, using a mixer, beat softened cream cheese with granulated sugar, eggs, and vanilla extract until smooth. Evenly divide mixture between muffin cups.
  • Bake for 20-25 minutes.
