Cinnamon Raisin Quick Bread

Sweet and fluffy homemade cinnamon and raisin bread. No yeast is needed to make this bread, you can have it prepared and baked in less than one hour. Baking powder is used instead of yeast to make the bread rise. This bread is perfect for serving for breakfast topped with butter, or as a side dish to go alongside dinner.

You only need one bowl to prepare the batter for this bread. Flour, baking powder, salt, and cinnamon are whisked together. Egg, milk, vegetable oil, and raisins are added to the batter and whisked until smooth. Pour the batter out into a greased 9-inch loaf pan. Bake until the top is lightly browned and it comes out clean with a toothpick. Let cool slightly before slicing.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup raisins

Instructions
 

  • Preheat oven to 400 F. In a large bowl, combine all of the ingredients together, whisk until smooth.
  • Spread batter out into a greased 9-inch loaf pan. Bake for 40-45 minutes.
