Soft and chewy cookie bars filled with Christmas themed sprinkles and topped with a mixture of granulated sugar and ground cinnamon. These cookie bars have all of the classic flavors of a traditional snickerdoodle cookie, but with Christmas themed sprinkles mixed into the cookie dough. These cookie bars are perfect to bake for a fun Christmas themed dessert that everyone will love.

The cookie dough is made like a classic snickerdoodle cookie dough, except with the addition of Christmas themed sprinkles mixed into the cookie dough. The dough is pressed into a greased square baking dish and topped with a mixture of granulated sugar and ground cinnamon. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Christmas Snickerdoodle Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, and cream of tartar. In a large bowl, combine butter with sugar until fluffy.
  2. Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the Christmas sprinkles. In a small bowl, combine granulated sugar and ground cinnamon.
  3. Evenly press the cookie dough into a greased 8-inch square baking dish. Sprinkle the cookie bars with the cinnamon sugar mixture. Bake for 20-25 minutes.
