Soft and chewy cookie bars filled with Christmas themed sprinkles and topped with a mixture of granulated sugar and ground cinnamon. These cookie bars have all of the classic flavors of a traditional snickerdoodle cookie, but with Christmas themed sprinkles mixed into the cookie dough. These cookie bars are perfect to bake for a fun Christmas themed dessert that everyone will love.

The cookie dough is made like a classic snickerdoodle cookie dough, except with the addition of Christmas themed sprinkles mixed into the cookie dough. The dough is pressed into a greased square baking dish and topped with a mixture of granulated sugar and ground cinnamon. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Christmas Snickerdoodle Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, and cream of tartar. In a large bowl, combine butter with sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the Christmas sprinkles. In a small bowl, combine granulated sugar and ground cinnamon.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Sprinkle the cookie bars with the cinnamon sugar mixture. Bake for 20-25 minutes.
