Soft and chewy peanut butter cookie cups topped with chocolate kisses. These cookie cups are made more fun and festive for Christmas by adding in some Christmas themed sprinkles into the cookie dough. The cookie cups are soft and chewy and filled with tons of delicious peanut butter flavor. And a chocolate kiss added on top of each cookie cup goes perfectly with the peanut butter flavor.

The cookie dough for these cookie cups is made similar to a classic peanut butter cookie dough, with the addition of Christmas themed sprinkles added into the cookie dough. They are divided into lined muffin cups and baked until the center of each cookie cup comes out clean with a toothpick. Place one unwrapped chocolate kiss on each cookie cup and let them cool completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles
  • chocolate kisses

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the Christmas sprinkles.
  • Evenly divide the cookie dough between the lined muffin tins. Bake for 15-20 minutes. Remove from the oven and top each cookie cup with one chocolate kiss.
