Chewy chocolate brownies topped with a soft and chewy Christmas themed sugar cookie dough. They are baked in muffin cups for quick and easy serving. They are great to make for a group of people because they can easily be served in the muffin cups. They make the perfect combination of a chewy funfetti sugar cookie with a chewy chocolate brownie. Everyone will love these easy brookie cups this Christmas.

The brownie batter is quick and easy to make, all of the ingredients are mixed together in one large mixing bowl. You can also use a box of brownie mix if you would rather. To make the cookie dough, it is a classic sugar cookie dough filled with Christmas themed sprinkles. Evenly divide the brownie batter between a lined muffin tin. Top each brownie layer with the Christmas themed cookie dough. Bake until the brookie cups comes out clean with a toothpick. Let cool completely before serving.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract until smooth.
  • In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the Christmas sprinkles. Evenly divide the brownie batter between the prepared muffin pan.
  • Evenly top each brownie batter with the cookie dough. Bake for 15-20 minutes.
