The cookie dough is made by mixing a box of strawberry cake mix with eggs and vegetable oil until smooth. Drop cookie dough onto a baking sheet at least 2-inches apart. Bake until they are fully cooked through. Remove from the oven and let cool before dipping in chocolate. Melt the chocolate chips in the microwave until it is fully melted and smooth. Dip each cookie in the chocolate and set onto a plate. Let sit until set.
Chocolate Dipped Strawberry Cookies
Ingredients
- 1 ( 15 oz.) box strawberry cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 12 oz. chocolate chips
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs and vegetable oil until smooth. Use a cookie scoop to place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
- Let cool completely. Place chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth. Dip each cookie in the chocolate and set onto a plate. Let sit until set.
