Chocolate Dipped Shortbread Cookies

Easy classic buttery shortbread cookies dipped in melted chocolate chips. Everyone will love the classic buttery shortbread flavor and crumbly texture, along with the delicious chocolate flavors. These easy cookies are perfect to bake for any holiday or occasion.

The cookie dough is made just like a classic shortbread cookie dough. Roll the cookie dough into balls and flatten slightly. Place onto a large ungreased baking sheet and bake until the bottom of the cookies are lightly browned. Melt chocolate chips in the microwave until they are fully melted and smooth and dip each cookie in the chocolate. Set onto a plate and let sit until it is fully set.

Chocolate Dipped Shortbread Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 12 oz. chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together butter and powdered sugar until fluffy. Add in the vanilla extract and flour and mix until combined.
  • Roll the cookie dough into balls and flatten slightly. Place onto a large ungreased baking sheet. Bake for 10-12 minutes. Place chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth.
  • Dip each cookie in the melted chocolate and set onto a plate. Let sit until it is fully set.
