Chocolate Chip S’mores Cookie Bars

Soft and chewy chocolate chip cookie bars filled with crushed graham crackers and mini marshmallow bits. These delicious chewy cookie bars have all of the classic flavors of a s’more. They make the perfect summer themed treat, or dessert any time of the year that you want to enjoy the classic flavors of s’mores.

The cookie dough is made like a classic chocolate chip cookie dough, with the addition of crushed graham crackers and mini marshmallow bits. Evenly press the cookie dough into a greased square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Chocolate Chip S'mores Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 cup crushed graham crackers
  • 1/2 cup mini marshmallow bits

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with both granulated and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the chocolate chips, crushed graham crackers, and mini marshmallow bits.
  • Press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
