Chocolate Chip Shortbread Cookies

Shortbread cookies are one of my favorite type of cookies, because of the buttery flaky flavor of the shortbread. Instead of classic shortbread cookies, these cookies are filled with chocolate chips. Making them the perfect cross between a buttery shortbread cookie, and a classic chocolate chip cookie. These would make a great Christmas cookie, or everyday cookie to bake with your family.

The dough for these cookies is just like making a classic shortbread cookie dough. The butter is mixed with sugar until light and fluffy, add in vanilla extract along with flour, salt, and milk. Mix until a thick dough forms. Fold the chocolate chips into the cookie dough and roll the dough into balls. Flatten each cookie slightly and place at least 2-inches apart onto ungreased baking sheets. Bake until the center comes out clean with a toothpick.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons milk
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix softened butter and sugar together until fluffy.
  • Add in vanilla extract, mix until smooth. Add in flour, salt, and milk, mix until a dough forms. Fold in chocolate chips.
  • Roll cookie dough into balls, and flatten slightly. Place 2-inches apart onto a ungreased baking sheet. Bake for 10-12 minutes.
